Chef Dona, his partner Irene (event manager) and the Carboni's Team brings to the table 25+years of experience in personal service, customer knowledge and food industry, a wealth of knowledge that reflects our passion for the industry. 


Chef Dona

Moved in Australia in 2009 chef Dona settled in Ballarat with his Family back in 2013.He loves sharing his passion for authentic Italian recipes, most learnt from his parents and Nonnas through his childhood, recipes that are the pillars of the menu at his Carboni's Italian Kitchen in Ballarat.
Grew up in Commercial Kitchen with his Dad, he started his kitchen journey back in 1994 and the Masterclasses are the occasion to get to know Dona and his knowledge.
